Have you discovered that recently your meals all seem to be the same?  The same foods cooked in the same way.  I certainly have.  In this boring time of drab winter days it is easy to fall into a rut. Those of us who are controlling our diabetes have to make a special effort to prepare and eat tasty and appealing meals.  When we do this we are much less likely to splurge on desserts or sweets.  So, I have been doing a recipe search and discovered a few ideas I would like to share..

These diabetic-friendly pancakes are low in fat and easy to make. Serve with fresh fruit to make it more filling, or add fruit right into the batter. For a heart-healthy whole wheat option, use whole wheat flour.

A serving of this dish contains only 10 carbohydrates. Simple substitutes like veggie sausage, reduced-fat cheese, and egg whites also cut back on unhealthy saturated fat.Frittatas are a good way to get a variety of nutrients. Eggs and cheese are a great source of calcium and protein. Mix in veggies to get an antioxidant kick as well as fiber. Fat-free cheese is a healthy alternative, especially because there is fat in the eggs and sausage.

I’ve made this several times, each time I’ve changed it. I have made it with chicken, Hamburger, Ground turkey, left over roast beef. it turns out great every time. The only thing I do different from the cooking is I add all the cheese and put the skillet in the oven at 350 for about 20 min. No mush no gush my family just loves this recipe!!!!!

Ground round is a lean cut of mean, but you can also substitute lean ground turkey to trim excess saturated fat. Though this dish contains lycopene-rich tomatoes, add onions for a boost of vitamin C. Combine Italian and Mexican cuisines with this dish. Top with shredded lettuce and diced tomatoes to add some vegetables to your pizza.

This dessert uses no-sugar-added ice cream to cut down on carbs. Keep these ingredients on hand for those moments when you discover you need a delicious dessert for the morning’s work birthday gathering or tomorrow’s neighborhood block party.
