November 1 has roared into the Midwest with an abrupt drop in temperatures.  Our balmy lows of mid-50s with highs  in the mid-70s has transformed into brisk and cold weather.  Fall has been so lovely up to this point, usually with sunny, not too warm days and pleasantly cool nights. November 1st pops in with lows in the mid-20s and a high in the mid-40s.  Although there has not been any snow in the Kansas City area, parts of Tennessee, and North and South Carolina have not been so lucky.  In Chicago the waves were so high they were sweeping across three lanes of traffic on the Outer Drive which parallels the shore of Lake Michigan.   What could be a better time for comfort food? Thus I began checking my recipes for a tasty, nutritious (of course heart and diabetes friendly) soup recipe.  Try either of these two soups.  I hope you enjoy them as much as I do.
